1 cup cooked rice
1 lb fresh green beans, trimmed and snapped
2 tsp canola oil
1 lb chicken breast, cubed
3/4 cup chicken broth
1/3 cup smooth peanut butter
2 tsp honey
1 tbsp soy sauce
1 tsp red chile paste or sriracha
2 tbsp lemon juice
3 green onions, thinly sliced
2 tbsp peanuts, chopped
Mix chicken, sauce and green beans and serve over rice.
